Vegan Fudge

Just four ingredients, 45 seconds in the microwave and 30 minutes in the freezer to make delicious, healthy and vegan fudge!




INGREDIENTS


1 cup dairy free chocolate chips (I love Enjoy Life)

1/3 cup natural almond butter

1/2 teaspoon vanilla extract *

1/4 cup almond milk (or other non-dairy milk)


Place all ingredients in a microwave-safe bowl. Microwave on high for 45 seconds then stir until the chocolate melts and all the ingredients combine.


Pour mixture into a parchment-lined pan to desired thickness (about 1/2" - 3/4" thick) and freeze for 30 minutes. Remove and cut into squares or any shape you desire. You can also use cookie cutters although this is a bit tricky and it tends to stick to the cutters! But it is doable.


If cutting out shapes with a cutter, make sure the fudge is not as thick (about 1/4" to 1/2" thick).

* Want a different flavor? Just use a different flavored extract or flavoring. If using almond flavor, reduce to 1/4 teaspoon.
