I love salads, especially in the summer. A salad is the perfect quick and easy meal and usually does not involve turning on the oven or stove.
This salad is great because it has a lot of delicious sweet fruit that helps to temper the tartness of the dressing. The crunch from the pumpkin and poppy seeds adds additional texture and flavor.

Strawberry Spinach Salad with Strawberry Poppyseed Vinaigrette
1 bag organic spinach
1/2 cup sliced organic strawberries
3/4 cup organic blueberries
1 cup watermelon cut in small cubes
1/2 avocado cut in any shape (circles was easiest for me!)
1/2 cup green organic grapes washed and sliced in half
1 kiwi sliced
1/4 cup toasted pumpkin seeds
3 tbsp hemp seeds
Arrange the salad in a bowl and make the dressing.
8 medium organic strawberries
1/4 cup balsamic vinegar
1/4 cup extra virgin olive oil
1/4 cup water
2 tbsp poppy seeds
2 garlic cloves
1 tsp maple syrup
1/2 tsp salt
1/2 tsp pepper
Blend everything in the blender until smooth. Pour dressing over salad just before serving.
