This salad is sweet and savory, delicately spicy, crunchy and full of texture. Serve with your favorite crackers or on a bed of lettuce.
2 Tbsp vegan mayo
2 Tbsp plain non-dairy yogurt
1/2 tsp fresh squeezed lemon juice
1/4 tsp maple syrup
3/4 tsp curry powder
Fresh cracked pepper
1-15 oz can chickpeas, drained and rinsed
Pinch salt & pepper
1 celery stalk
1-1/2 whole green onion stalks
1/4 cup sliced almonds (or roasted pepitas)
1/4 cup raisins
1️⃣ Make the dressing by stirring the mayonnaise, yogurt, lemon juice, maple syrup, curry powder, salt and pepper in a small bowl. Taste and adjust the curry powder or salt if needed.
2️⃣ Lightly mash the chickpeas in a large bowl, leaving some whole. Finely dice the celery and slice the green onions. Place green onions, celery, sliced almonds and raisins in the bowl with the chickpeas and stir to combine.
3️⃣ Pour the dressing over the top of the chickpea mixture and stir to coat.
