Beautiful and colorful #tofu #stirfry with just about every vegetable I could find! Green is my favorite color to eat so I started with broccoli, green pepper, green onion and cabbage. I then added red pepper, red onion, carrots, fresh garlic and fresh ginger. Add salt & pepper and whatever other spices you like and stir-fry in olive oil until tender crisp. Add in tofu and rice or regular noodles and you’ve got a quick, delicious, nourishing and satisfying meal. Just remember to start with LOTS of veggies - you can’t have too many!
