Collard Green Pesto

This quick and easy pesto comes together fast, is nutrient-dense and loaded with flavor! Serve with your protein of choice.

Chickpea Pasta with Collard Green Pesto & Crispy Tofu

INGREDIENTS


1-1/2 cups chopped collard greens (packed, but not tightly)

1/2 cups Field + Farmer Sweet Basil Dressing

1-2 garlic cloves, halved

3 Tablespoons nutritional yeast

Salt, pepper and lemon juice to taste


Blitz collards, dressing, cloves, nutritional yeast and a squeeze of lemon juice in a food processor or blender until thoroughly blended. Taste and add salt, pepper and additional lemon juice if desired. Use 2-3 Tablespoons to a 2-ounce serving of pasta.


I used Banza Chickpea Penne Pasta in this recipe.


Serve with a sprinkle of nutritional yeast, cracked black pepper and crushed red pepper if desired.
