Chickpea Pasta with Collard Green Pesto & Crispy Tofu
1-1/2 cups chopped collard greens (packed, but not tightly)
1/2 cups Field + Farmer Sweet Basil Dressing
1-2 garlic cloves, halved
3 Tablespoons nutritional yeast
Salt, pepper and lemon juice to taste
Blitz collards, dressing, cloves, nutritional yeast and a squeeze of lemon juice in a food processor or blender until thoroughly blended. Taste and add salt, pepper and additional lemon juice if desired. Use 2-3 Tablespoons to a 2-ounce serving of pasta.
