Coconut Key Lime Protein Bites

These little bites have all the flavor of a piece of key lime pie and creamy coconut. They are vegan and gluten-free.

(Makes 15 Bites)


INGREDIENTS

1 cup coconut flour

1 scoop PlantFusion Inspire Vanilla Bean Protein Powder

1/3 cup Origine coconut sugar

Pinch of salt (optional)

1/2 cup water

1/3 cup coconut oil, melted

Zest and juice of 1 lime

Lime Sugar (optional, recipe follows)


DIRECTIONS

Place coconut flour, protein powder, coconut sugar, salt (if using) and lime zest in a bowl. Stir with a fork or whisk to combine. Pour in melted coconut oil, water and lime juice and stir to form a soft dough. Form dough into approximately 15 equal sized balls, about 1-1/4 inch in diameter, by gently pressing the dough together instead of rolling (if you try to roll the dough between your hands the balls may fall apart). If dough is not sticking together, add a small amount of water as needed to enable it to hold together.


Place bites in freezer for 10-15 minutes until firm. Roll in lime sugar, if desired.


Lime Sugar

1-1/2 Tablespoons Origine coconut sugar

Zest of 1 lime

Stir sugar and lime juice together until well combined. Dip or dust each bite with the mixture.


Refrigerate any uneaten bites.
